Cantucci are fingers of crumbly pastry packed with almond pieces. Made with few ingredients but all of excellent quality: flour, sugar, eggs, honey, almonds and baking agents. San Tommaso took a leaf from grandma’s cookery book to come up with an assortment of sweet treats, a selection of Abruzzo’s best traditional confectionery. Selected almonds are toasted and caramelized over heat with equal amounts of water and sugar. The process is simple but very delicate, requiring a patient observance of the time needed to melt the sugar and coat the almonds in a filmy froth. When the almonds are cool they will be coated in a thin layer of solidified sugar, enough to resemble real pebbles and explain the name “mandorla atterrata” or “almonds on the ground” . . . The flavour and aroma of almonds linger on the palate, and the crisp texture makes the sweetness even sweeter.
